Mung bean dessert soup also known as Asian dessert soup. This sweet desserts are very familiar in Indonesia, China, Hong Kong, Macau, Taiwan, Vietnam, and other countries in Asia. There are two types of mung bean (green bean) dessert soup. Indonesian style they usually use whole green beans (mung beans), Hong Kong, Macau, or China mostly use yellow mung beans (peeled green beans). For me, I like both. It depends what I have in my kitchen. I love this dessert soup because I can enjoy it cold during summer, and hot during winter. Besides that, it is very easy to make yet with very simple ingredients. The taste is delightful tasty with a coconut milk flavor. You can also add sago, tapioca pearls, or sweet potatoes in it. It's a great dessert soup for any season. This time I am going to use the peeled mung bean with sweet potatoes and coconut milk.

Ingredients

30 minutes
  1. 1/2 cuppeeled mung bean (you can get it in any Asian store)
  2. 1medium sweet potatoes (yams)
  3. Sugar (depends how much you like the sweetness)
  4. 2-3 cupswater
  5. 1/2 cupor more coconut milk
  6. Pinchsalt (1/8 tsp salt)
  7. 1 tspvanilla extract

Cooking Instructions

    Rinse and soak the mung bean for at least 2hours

    Peel the sweet potatoes and cut into cube

  3. 3

    Using medium saucepan add water, add the mung bean (the water should be at least 1 inches covers the mung bean). Bring it into boil cook for awhile, then put it into simmer until the mung bean tender. Add water if soup gets too thick.

    Then add the sweet potatoes cubes and sprinkle salt. Add sugar and let it cook until the sugar dissolves and the sweet potatoes are soft. Then add coconut milk and vanilla extract. Bring it in to boil. Once it boil then turn off the heat or put it in the simmer.

    Serve warm or chilled as you like. If you like chilled soup, you have to stored it in the refrigerator before served. Enjoy!
