Prawn curry

Heat oil in a wok and add chopped onions and sauté till brown.

Add ginger garlic paste and sauté till raw smell goes away.

Add chopped tomato and sauté it well. Add cashews and sauté lightly. Cool this mix and blend it in a blender.

You can sauté the prawns lightly till pink.

Put the blend mix back in the wok and add tomato purée to it.

Add salt and rest of the dry spices and mix well.

As the curry boils and leaves oil, add the prawns and cook for few minutes. Don’t overcook or the prawns might get hard.

Garnish with coriander leaves and serve with roti or hot rice for a delicious meal.
