Homemade Spicy Peanut Sauce (Indonesian Sambel Kacang)

This peanut sauce originated from Indonesia, also known as a sambel kacang or sambel pecel. It made from fried or roasted peanuts and then added chili and spices, blend or grind it into smooth peanut paste. Nowadays besides in Indonesia, peanut sauce is widely used in cuisine worldwide such as China, Thailand, and Vietnam in various versions and recipes. Peanut sauce can be use as salad dressing, satay (meat skewers), dipping sauce for any appetizers such as egg rolls or spring rolls, also can enjoy it over steamed rice or steamed vegetables. You can buy ready -to-eat Indonesian peanut sauce in most of Asian store. But the taste quite little bit different. I like to make my own peanut sauce, since it’s easy to make, and of course I will have a better taste peanut sauce than the ready-to-eat one. The ingredients I used are very simple as well as the steps how to make it.

Cooking Instructions

Put the roasted peanut, garlic, 2 lime kafir leave, tamarind juice, and water into a blender.

Blend them until smooth or into paste. Transfer to the cooking pan, add some water if need it (the consistency is not too thick or too watery). Also add the rest of lime kafir leaves.

Add coconut sugar and cook the mixture in a low heat until the oil comes out from the mixture paste. Keep stirring to avoid getting burn. Taste it before turn off the heat.

Transfer to a airtight container, and the peanut sauce is ready to use anytime you need it. Keep it in the refrigerator after completely cool, and also you can freeze it as a stock

Usually I separated mine into 2 containers. Small container for refrigerator usually I finish it in a week. The big container to freeze it. Then I just defrost it whenever I need it. Enjoy!
