I am always inspired with soup especially with seasonal greens.

Soak almonds in hot water for at least 20 minutes. Peel and ground to a fine paste. (save few almonds for garnish). Wash clean the fresh fenugreek leaves and chop finely. Dry it in paper cloth.

Heat a heavy bottom pan. Ounce heated add butter/ oil. Add finely chopped onion. Sauté till it becomes translucent. Add finely chopped tomatoes. Cook till it mashes up. Then add finely chopped fenugreek leaves cook it in vegetable broth. When it is cooked add almond paste. Adjust the consistency by adding milk/ cream. Finally add salt and pepper. Serve hot, topped with butter and Garnish with some almond Perfect winter soup
