This soup is perfect for winter because it’s packed with lots of vegetables and helps keep you warm. It’s especially helpful if you have a cold, and it has a delicious crunchy texture when you drink it.

First, heat water in a pan, add a little oil, and boil the noodles. Drain them in a colander and toss with a little oil to prevent sticking.

In a wok, heat oil and mix the noodles with a little all-purpose flour and 1 teaspoon cornstarch. Fry until golden and set aside.

In the same wok, heat 1 tablespoon oil. Add garlic and ginger, sauté briefly until the raw smell goes away. Add all the vegetables and stir-fry for a short time (do not overcook). Add soy sauce and chili sauce, mix well, then add vinegar and MSG (if using).

Add 2 cups (about 480 ml) of water and let it cook for a few minutes. Add the fried noodles, then turn off the heat.

Top with green onions and some more noodles. Serve hot.
