Spinach and Mint Soup

I just love winters because of the fresh green leafy vegetables it has to offer us. We enjoy having soups during this season. Spinach soup is very tasty and healthy. I have given a little twist adding some fresh mint to the usual spinach soup. It gives a very good flavour and freshness to the usual spinach soup.

I have given a little twist adding some fresh mint to the usual spinach soup. It gives a very good flavour and freshness to the usual spinach soup.

First of all blanch spinach for 3 to 4 minutes and add it to the ice water. Let it cool down completely then strain the water. Doing this step will retain the colour of spinach. Now chop the spinach and add it to the mixer along with garlic, green chilli, ginger paste and mint leaves. Grind it to a smooth paste.

Now heat butter in a pot and add flour to it and cook it on medium heat until light pink in colour. Now add milk to it and stir it continuously so that there are no lumps remaining. Now add bay leaf, salt and pepper to it. Add the prepared spinach paste and mix it well.

Cook it on medium heat for 5 - 8 minutes and add fresh cream and lemon juice. Cook for two more minutes and turn off the heat.

Serve spinach and mint soup as a starter or side dish. You can garnish it with the spring of mint and fresh cream.
