Steps

Wash and clean raw turmeric. Peel it. Cut cauliflower in medium size pieces.

Heat water, Add salt in it and when it started boiling add cauliflower in it and boil it for 2-3 minutes. Strain water

Grate raw turmeric

Heat ghee in kadhai and fry sliced cashews in it and remove it from ghee.

Then Add cumin seeds in same ghee. Add a pinch of Asafoetida in ghee. Add grated turmeric in ghee stir it for 2 -3 minutes

Add green peas in it,mix it and cook it for 2-3 minutes.

Add whisked yogurt in it and stir it continuesly, for one-two boils

Add salt and other spices,add cauliflower in it. add fried cashew nuts

Let it cook on low flame for 7-8 minutes.

This is Tipical Rajstani sabji speciality of Jodhpur.. You can add veggies of your choice also.Or you can made only adding peas.. This sabji is very healthy but turmeric is hot by nature so you have to balance it by adding curd and ghee.

When it cools it became thicker that time add little milk and heat it.. Do not add water. You can keep this sabji for 4-5 days. Have it with lukkha fulka(without butter /ghee roti) or with makki ki roti.
