Ingredients

30 minutes

  1. Soup Base
  2. 12 stripsbacon
  3. 2 clovesgarlic
  4. 1medium onion
  5. 4 cupsbeef broth
  6. 8red potatoes
  7. Béchamel Sauce
  8. 100 g(~1/2 cup) butter
  9. 100 g(~1/2 cup) flour
  10. 3 cupsmilk
  11. 1 cupshredded cheddar cheese
  12. Salt and pepper to taste
  13. 2thinly sliced green onions

Cooking Instructions

  1. 1

    Prep your ingredients:
    Dice bacon and onions. Peel and chop garlic cloves. Dice potatoes into 1/2 inch cubes. Thinly slice green onions.

    Prepare Soup Base:
    Cook bacon over medium heat in large soup pot until brown.

    Add garlic and onions to soup pot and cook until onions become slightly translucent.

    Add beef broth and potatoes to soup pot, allow to boil. Cover and reduce heat to low. Simmer for ~15 minutes or until potatoes are fork tender.

    Prepare Béchamel:
    In a sauce pan, add 1/2 cup butter. Cook until butter has melted and is no longer "foamy/bubbly"

    Add 1/2 cup of flour to sauce pan and stir until well combined. Cook for 4 to 5 minutes stirring constantly.

    Slowly add milk to sauce pan, stirring to avoid lumps. Once all milk is added, stir in 1 cup of cheese and add salt/pepper to taste.

    Combine béchamel sauce to soup base in soup pot and stir until combined. Serve topped with green onions.

Just made this potato soup 1/7/24 and enjoyed it very much! It has a hearty flavor and a nice balance of cheese, beef and potatoes. My wife would liked the bacon browned so crispy you swear it was burnt not in the soup but added when serving. I liked it just the way you wrote it. I did drain the grease after cooking bacon but added a little back as i cooked the onions. if you like it a bit more spicy serve with red pepper flakes. Big hit with my family! Two thumbs up! Will add it to my favorites!
