Combine 4 1/4 cups beef bone broth (1 liter) with 12 3/4 cups broth (3 liters) in a pot. Add 2 tablespoons salt, 1 tablespoon sugar, and 3 tablespoons fish sauce. Simmer over low heat.

Score an onion and add it to the pot, keeping the slices attached. This helps make the broth softer and sweeter.

Char the star anise, cinnamon stick, black cardamom, ginger, and onion. Rinse them, then add to the broth.

Simmer gently with the lid slightly open to prevent the broth from becoming cloudy. While waiting, prepare the chopped scallions, cilantro, beef, and rice noodles.

Slice the beef.

Arrange all the ingredients in a bowl. Sprinkle a little MSG if desired, but it's optional.
