[Prepare the bitter melon] Cut the bitter melon in half vertically and use a spoon to scoop out the seeds.

Cut into 5 mm slices. Sprinkle with salt (not listed) and let sit (about 30 minutes).

Once wilted, set on a strainer and pour hot water on top (be careful of splatters).

Place in a storage container, add the seasonings, and let the hot goya marinade.

Enjoy it after half a day.

I recommend chilling it in the refrigerator. The picture shows the pickles with 1/4 of a marinated sliced onion.
