I thought that making cookies with the soft dough from "Chocolate x Almond Chocolate Muffins"would turn out really crusty.

Ingredients

6 servings
  1. 85 grams★Cake flour
  2. 15 grams★Pure cocoa
  3. 30 grams★Almond flour
  4. 1 tsp★Baking powder
  5. 60 gramsWhite sugar
  6. 30 gramsMargarine
  7. 30 gramsVegetable oil
  8. 1 largeegg
  9. 80 gramsChocolate chips

Cooking Instructions

    Combine and sift all ingredients marked with a ★.

    Microwave the margarine for 40 seconds and transfer to a bowl. Add the white sugar and mix well. (The mixture can be slightly lumpy at this point.)

    Add the vegetable oil and mix well with a whisk until smooth.

    Add beaten eggs in 3 batches. Mix with each addition.

    Mix in the sifted dry ingredients. Using a rubber spatula, fold in the dough from the bottom of the bowl. Add the chocolate chips before the dough becomes completely smooth.

    Using a spoon, drop the cookie dough onto a baking tray lined with parchment paper. Arrange the cookies with decent space between them.

    Bake in a 160℃ preheated oven for 30 minutes. Let them cool on a rack to finish.

    You could also bake the remaining dough in a toaster oven. Bake at 1000 W for 5 minutes, flip them over, then bake for another 2 minutes.
