First we make kadhai masala. for this take coriander seeds,cumin seeds,pepper corns and dry red chilli. Heat a pan add all the above whole spices and dry roast them on medium flame for 2 minutes or the aroma comes.turn off the flame let it cool.then put them in grinding jar and coarsely grind them.

Take a kadhai add 3 tbsp oil heat it add bay leaf and fine chopped onion saute when it turns light brown add chopped ginger saute few seconds then add ginger garlic paste.saute untill raw smell goes.add kashmiri chilli powder,chopped tomatoes,coriander and turmeric powder and salt.mix well.cook for two minutes.

Now add tomato puree and 2 tsp ground masala,mix well. Cover and cook on low flame for 6-8 minutes.

In meantime take diced veggies heat a pan add 1 tbsp oil add diced onion,capsicum saute a minute then add diced cottage cheese and tomatoes give them a nice toss.add some salt and 2 tsp ground masala mix gently turn off the flame.

Now open the tomato onion masala the oil has released and masala cooked perfectly.add the tossed paneer and veggies in it.add 1/2 cup water, kasuri methi and coriander leaves mix nicely.cover and simmer for 5-6 minutes.

Turn off the flame.the kadhai paneer is ready serve with naan or missi roti.
