Masala dosa is a variation of the popular South Indian dosa,which has its origin in Tuluva Mangalorean cuisine of Karnataka.it is made with the rice ,lentils,potato,fenugreek and curry leaves and served with chutneys and sambar.it is popular in south India,it can be found in all other parts of country and overseas. Today I am making it in little healthier way by using Millet instead of rice which help in weight loss as well by skipping potato filling .so let’s head to the kitchen and start prepare for millet masala dosa

Ingredients

Prep time 6 hours, cook time 10 minutes
4 servings
  • 1 cupFoxtail millet
  • 1/4 cupurad dal
  • 1/4 tspfenugreek seeds
  • 1/3 cupbeaten rice(poha)
  • to tasteSalt
  • As neededWater
  • as requiredGhee
  • For masala
  • Handfulpeanut
  • 1/2 tspcumin seeds
  • 1/2 tspmustard seeds
  • 1medium size onion (diced)
  • 3-4green chilli (slit)
  • 1medium size tomato (roughly chopped)
  • 2 pinchasafoetida
  • to tasteSalt
  • 4boiled potato
  • 3/4 tspturmeric powder
  • 1/2 tspcoriander powder
  • 1/2 tspred chilli powder
  • 1/2 tspdry mango powder
  • Handfulchopped coriander leaves
  • 1 tbspoil

Steps

Prep time 6 hours, cook time 10 minutes
  1. 1

    Soak the millet for 6 hours.
    Soak the urad dal with fenugreek seeds also for 6 hours.
    Soak the beaten rice for 30 minutes before grinding.

    Grind everything to a fine batter and mix well together. Add salt and let the batter ferment for 6 hours.

    For making potato masala,in a pan heat oil fry peanut light brown and keep aside,cool it and roughly choose it.
    Now in same pan and oil add in cumin seeds and mustard seed sauté for seconds add onion and asafoetida for the time onion came out translucent then add tomatoes and green chillis cover and cook till tomato get mushy.

    Now add salt,red chilli powder,turmeric powder and coriander powder, dry mango powder mix well then add mashed potatoes mix well cook for 5 minutes,now add roughly chopped peanut and chopped coriander leaves.
    Your filling of potato masala is ready for dosa.

    After fermentation,pour a ladle of batter on the tawa or dosa pan and start making the dosas.when one side is done Aad a full spoon of potato masala and roll the dosa what ever shape you like.

    Serve the Millet masala dosas hot with sambhar and chutney.enjoy
