Toast the sliced almonds in the oven at 350°F (180°C), watching carefully until they are golden brown.

Make a light golden caramel: Put the sugar in a saucepan and let it caramelize without stirring, so it doesn't get too dark.

Add the warm almonds, after lightly crushing them, to the caramel. Gently stir over low heat with a wooden spoon, then add the lemon juice.

Gradually add the hot cream, then the butter in small pieces.

Two methods:
Pour some of the nougatine into your prepared mold, or
Spread it onto a sheet of parchment paper, cover with another sheet, and use a rolling pin to flatten the nougatine as desired. If it cools and hardens, you can warm it in the oven at 195°F (90°C) to make it workable again.
