Carbonara

I simplified a recipe I learned while I was overseas. I highly recommend this!
Bring out the fragrance of the garlic by cooking it as if simmering in oil. The sauce will be thick when the white wine and oil emulsify. Mixing the egg in after removing the pasta from the heat will prevent lumps from forming. Recipe by mini

Cooking Instructions
- 1
Beat the ingredients marked * in a bowl. Cut the bacon into bite-sized pieces. Finely chop the garlic.
- 2
Boil the pasta in salt water for 1 minute less than the time indicated on the packet. (10 g of salt per litre of water.)
- 3
Fry the oil and garlic over low heat. When it becomes fragrant, add and fry the bacon.
- 4
Add the white wine, raise the heat to high to evaporate the alcohol, then turn the heat back down to low. Omit this step if you are not adding wine.
- 5
Add the pasta to the pan and shake it around so it is coated in oil.
- 6
Pour the contents of the pan into the bowl from Step 1, and mix so the cheese melts. Season with black pepper to finish.
- 7
Fresh pasta and various sauces -.

Carbonara Carbonara
After a lot of experimenting, arrived at this recipe for the perfect cream free carbonara. Key is finishing the pasta in the skillet the pancetta was fried in. This makes it easier to add pasta water as needed since its never drained and prevents the eggs from solidifying fjaeckel -
Carbonara Carbonara
We had a potluck at work a couple of days ago and someone brought in a dish that they called carbonara. Now, I'm guilty of being an experimenter myself and making carbonara that's not really carbonara, at least traditionally speaking (see mushroom carbonara, recipe posted previously). But the potluck version was way, way, way out there. In fact, another coworker said it tasted like chicken soup. Which is...weird, but also accurate. The pasta was actually good; it just wasn't carbonara. Anyway, this motivated me to make my own version, sticking much more closely to the dish's roots. The one concession made, out of necessity because it's not a readily available ingredient around here, is the substitution of bacon for the traditional guanciale. Bacon's good, but it's not the same. Don't worry, though, because the pasta still turned out creamy and delicious. Robert Gonzal -

Easy Carbonara Easy Carbonara
Usually, carbonara is made with cheese, black pepper, eggs, and panchetta (salted pork), but I decided to make it simply with things at home.I have listed an egg yolk, but you could also use a whole egg. However, make sure to use a small egg if you're using it whole.Adjust the amount of salt for the final seasoning, depending on the saltiness of the bacon. For 1 serving.
