Baigan Bharta (Rajasthani style)

This bharta made with roasted brinjal, onion, tomato, ginger -garlic and spices is very tasty. Even those who do not like to eat brinjal's vegetable will also find it very tasty. Serve it with litti/ paratha/ Jawar Roti or rice.

This bharta made with roasted brinjal, onion, tomato, ginger -garlic and spices is very tasty. Even those who do not like to eat brinjal's vegetable will also find it very tasty. Serve it with litti/ paratha/ Jawar Roti or rice.
Steps

Dry roast brinjal directly on flame. Remove it’s skin. Keep aside.

Heat oil in a wok. Add onion. Saute it. Add green chilli, green peas and ginger garlic paste. Roast it on medium heat till onions become translucent.

Add chopped tomatoes. Mix it well. Cook for 3-4 minutes.

When it becomes soft add all the spices.

Add roasted brinjal. Mix it well. Cook on medium high flame. Stir continuesly. Turn off the flame. Add coriander leaves and lemon juice.

Transfer it in a serving bowl. Garnish with chopped coriander leaves.
