Stuffed Brinjal Drumstick Sabzi

Wash brinjals and drumsticks well. Cut potatoes in medium sized cubes and keep it aside.

Take garlic, gathiya, groundnuts, sugar, salt, garam masala, some chilli powder and cumin powder in a jar and grind it well. Sprinkle coriander leaves. Keep it aside. Cut tomato and keep it aside.

Cut the brinjals and fill the masala in it.

Heat oil in a vessel. I used brass pot. Add mustard seeds and let it crackle. Add tomatoes, asafoetida, red chili powder, turmeric powder and cumin powder. Mix it well.

Add potatoes and drumsticks. Give it a good mix. Add water and put brinjals on top of it. Do not mix it. Just put the brinjals and let it be as it is. And cover the pot with plate.

Let it cook until water burns. You can add more water if required. Sprinkle coriander leaves on it. Delicious sabzi is ready to serve.
