A traditional meze or a light meal on the island of Crete, Dakos is often called ' Grease Bruschetta ' and is easy to make with few ingredients and no cooking. For this recipe you can make your own barley rusk or use a thick slice of toasted crusty bread .Aged Myzithra cheese is the traditional cheese for this dish in Crete.Crete Dakos is a barley rusks ,drizzled with olive oil and topped with cheese ,grated tomatoes ,olives or sometimes with capers.This barley rusk is essentially double baked bread that is made with barley flour or barley and whole wheat flour .These rusks are 100 % whole grain so they can be somewhat tough n hard ,that's why it's important to drizzle some water on bread so that they can soften a bit but still have a crunch.Enjoy this super healthy Dakos .

Ingredients

  • 125 gmwheat flour
  • 125 gmbarley flour
  • 2 tspyeast
  • 2 tspsugar
  • 2 tspoil
  • to tasteSalt
  • 1grated tomato (discard skin)
  • 1/2 cupfeta cheese or any other cheese or cottage cheese
  • Pinchpepper powder
  • as neededOlives (optional)
  • 1/2 tsporegano
  • 2-3 tbspolive oil
  • 2 tspGreen herbs of your choice

Steps

    Take flours,mix salt in it.Activate yeast with sugar and warm water and mix it with flours and prepare bread dough by kneading it with warm water for at least 10 minutes.

    Knead until dough becomes soft and non sticky.Shape into a ball and place in a greased bowl.Let it rest for 30 to 40 minutes or until it becomes double in size.

    Once the dough has risen.knock back the dough and shape it in a long loaf.(you can cut in slices) cover the dough and let it rise again.Bake them at 180 ' for 20 to 25 minutes.Once the dough has cooled,separate the slices and bake them at 160 " for 7 to 8 minutes or until it becomes crispy n crunchy.

    Drizzle some water and then some olive oil on the top of the bread,sprinkle some oregano,add grated tomato with some herbs,top it with feta cheese or any other cheese or panner and olives.Sprinkle some black pepper and garnish it with any green herbs (optional).
