Ingredients

8 servings
  1. -casserole----
  2. 3large chicken breast, boneless skinless
  3. 1large red bell pepper
  4. 1 teaspoonsalt
  5. 1 poundcauliflower
  6. 1/2 teaspoongranulated garlic powder
  7. 2 tablespoonschopped parsley
  8. 1/2 teaspoonwhite pepper
  9. 1 tablespoonlemon juice
  10. ---sour cream mixture------
  11. 1 cupmayonnaise
  12. 1-1/4 cupsour cream
  13. 1-1/2 tablespoonschopped chives
  14. -for frying----
  15. 1/4 cupvegetable oil
  16. --cheese----
  17. 2 cupextra sharp cheddar cheese

Cooking Instructions

  1. 1

    Preheat oven 400 degrees Fahrenheit

  2. 2

    Cube the chicken into bite sized pieces

  3. 3

    Heat a pan and fry the chicken till done

  4. 4

    Move to a bowl and season with half the seasonings and stir.

  5. 5

    Add the cauliflower to the pan and brown it.

  6. 6

    Add red peppers to the cauliflower and season with the other half of seasonings. Mix well.

  7. 7

    In the bowl mix the mayonnaise, sour cream, and chives.

    Add the lemon juice, chicken, and cauliflower together

  9. 9

    Add the sour cream mixture and mix with chicken put in a deep 10 inch pan that is oven safe.

    Add cheese

    Top with potato chips.

    Bake in oven 20 minutes let rest 5 minutes and serve

OMG.. this is really good! And pretty lo-carb if you don't go crazy with the potato chips. Will definitely make it again!
