I made a cookie version from a recipe for tart crust. The rum and rice syrup coating gives it a nice appearance.
Thoroughly baking these makes them delicious!! If you don't have any rice syrup, you can substitute with maple syrup or honey! Recipe by Oshio

I made a cookie version from a recipe for tart crust. The rum and rice syrup coating gives it a nice appearance.

Combine the whole wheat flour, beet sugar, almond flour, salt, and olive oil and use your hands to mix together.

Add the soy milk a bit at a time and unify the dough.

Wrap up the dough in plastic wrap and let it rest in the refrigerator.

Use a rolling pin to spread out and flatten the dough. Use a fork to poke holes into it (this removes the air).

Use a knife to cut the dough into 2 x 3 cm squares. Bake in the oven at 180 ℃ for 20 minutes.

Once they have baked to a light brown, they're complete.

Finish by coating the top with rice syrup dissolved in water and rum.
