Baked Mat Gujiya

The quintessential holi dessert, Gujiya is finally here in an all new avatar Because what is Holi without gujiyas, right?
During festivals we all end up doing a lot of binging on a variety of fried snacks and sweets. But this year I thought of making some guiltfree gujiyas, so made these pretty and colorful baked gujiyas filled with dry fruits, jaggery and dessicated coconut and gave them a Mat style pattern for a different and unique look

During festivals we all end up doing a lot of binging on a variety of fried snacks and sweets. But this year I thought of making some guiltfree gujiyas, so made these pretty and colorful baked gujiyas filled with dry fruits, jaggery and dessicated coconut and gave them a Mat style pattern for a different and unique look

Take all-purpose flour in a large bowl. Add melted ghee to flour. Mix ghee with the flour using your fingers. Start adding milk little by little and knead to form a slightly stiff dough.
Cover the dough with a damp cloth and let it rest for 30 to 45 minutes. - 2
To make the filling, in a pan, heat 1 tbsp ghee on medium heat. Add chopped raisins and nuts and fry for 2 minutes until fragrant. Now add the jaggery and let it melt completely. Then add the dessicated coconut and roast for 2 minutes until lightly fragrant. Now to the same pan, add grated mawa. Lower the heat to low and roast for 5 to 6 minutes until mawa turns light golden in color. Add cardamom powder and mix. The Filling is ready, let it cool down for sometime.

Divide the gujiya dough into two equal parts. Add raspberry extract to one part and let the other part remain as it is. Mix the extract well and your pink colored raspberry flavoured dough is ready.

Pinch a small ball sized dough each from the pink and white dough. Roll both of them into a thin rectangular sheet. Place the pink sheet on top of the white sheet (as shown in the pictures) Fill about 1 tbsp of the filling inside. (Shape the gujiyas as shown in the pictures step by step). Seal all the gujiyas well from all sides using water.

Preheat the oven at 160°. Brush the gujiyas with ghee and bake them for about 15 minutes at 160°. Let them cool at room temperature.

Till then, in a pan add sugar and water and prepare the sugar syrup. Either dip the gujiyas completely or brush them with the prepared sugar syrup. Your baked healthy mat gujiyas are ready !!
