Thandai is quintessential part of holi celebration s, no holi party is incomplete without this drink.Thandai is an Indian cold drink prepared with a mixture of almonds, fennel seeds, watermelon kernels, rose petals, pepper, poppy seeds, cardamom, saffron, milk and sugar. I am giving it a slight twist by making thandai wali rabri and gulab flavoured thandai drink.

Ingredients

3-4 hours
4 people
  • ForThandai instant powder-
  • 4 tbspAlmonds
  • 3 tbspcashewnuts
  • 1 tbspPistachios
  • 1 tbspMelon seeds
  • 10-12Black pepper
  • 1 tbspPoppy seeds
  • 1/2 tbspfennel seeds
  • 3-4Cardamom
  • 8-10 threadssaffron strands
  • 10-15 petalsRose petals
  • For Rabri-
  • 1 litreFull fat Milk
  • 1/4 cupsugar
  • as neededChopped dry fruits
  • Forgulab thandai
  • 4-5 tbspRose sharbat -
  • as neededPrepared rabri
  • as requriedDryfruits (for garnish)

Steps

3-4 hours
  1. 1

    1)Thandai Powder-
    Grind all the dry ingredients, make sure to grind it slowly so that dryfruits doesn't excrete its oils.

    2)Rabri-
    1.Take a heavy bottom vessel add milk and bring it to a boil on a high flame
    2.Lower the flame and stir the milk continuously until the milk changes its color and becomes a little thick.
    3.Stir it continuously for about half an hour, at this point add chopped dry fruits and thandai powder.
    4.Continue stirring it out until the milk and thandai powder gets mixed finally.
    5. After 1 hour when milk gets thick and changes colors add 1/4 cup of sugar. Give it a mix
    6.Turn off the flame.

    7. Turn off the flame and let it cool down in room temperature.
    8. Keep the Thandai Rabri in the refrigerator for 2-3 hours.
    9. In a glass add some rose petals, pour the chilled rabri and garnish with some dryfruits and rose petals.

  4. 4

    3) Rose thandai-
    1.Take a glass bowl, pour some rose sharbat.
    2.Now take a spoonful of chilled rabri thandai and add into sharbat, give it a mix.
    3.Garnish with chopped dryfruits and serve.
