Ingredients

4 people
  1. Cooking oil
  2. 1small onion, finely chopped
  3. 1pepper, diced (any colour)
  4. 1 tspminced garlic
  5. 1 canjackfruit, rinsed and shredded
  6. 1small sweet potato, peeled and diced
  7. 1 cantomatoes
  8. 1 canpinto beans (or any bean, really!)
  9. 2 tbspspices (I used my "Mexican mix" - see separate recipe)
  10. 2 tbspbalsamic vinegar
  11. 2 tbspsoy sauce

Steps

  1. 1

    Gently fry the onion, garlic and peppers with a little oil in a large pan for about 5 minutes, while you prepare the jackfruit. Stir in the spices and fry for a minute or so.

  2. 2

    Add the prepared jackfruit, stir in and fry for a few more minutes while you prepare the sweet potato and open the tins. Add the rest of the ingredients and stir thoroughly.

  3. 3

    Cover and leave to simmer gently for about half an hour.
