Easter without Scotch Eggs is incomplete. Scotch Eggs though the name suggests a cuisine which have been made by Scottish, well research says the food was made in North India and carried to UK when the name came into Scotch Eggs. In UK people eat Scotch Eggs in picnics or as a part of Sunday brunch and of course most importantly for Easter Sunday brunch. There are certainly Indian versions and so much so even Kolkata versions which is called ‘Dimer Devil’ - I am sharing the British way and tried to keep as traditional as possible

Boil water adding pinch of salt in a bowl and slowly add the eggs. Boil for 12 mins. The eggs should be hard boiled. Set aside and immediately bring it to running water to peel the eggs shells easily. Once peeled place it on a kitchen towel

In a separate bowl add the minced meat and add cayenne pepper, nutmeg and salt. Mix very well and set aside

Place a cling film on the kitchen counter and take a ladle of the minced meat, make it into a oval shape and place it on the cling film, fold the cling film on it to give a firm shape.

Place the boiled egg and putting in a little water on your palm bring in the minced meat around the boiled egg and fold the minced meat. Once done for all keep on a plate

Place white flour in one bowl, have 2 eggs beaten in a bowl and bread crumbs in another bowl. Take the eggs with minced meat around it and first place in the white flour bowl, then with another hand place it in the beaten egg bowl and then to the bread crumbs bowl. Pressing firmly all the way, set aside on a plate

In a wok heat oil and very gently add the Scotch eggs and on high flame fry 3-4 mins on each side. Once done set aside and cut into half to plate

Plate on parsley leaves and enjoy with any dips. I enjoyed with tomato ketchup
