In a pan heat oil and add potatoes

Fry a bit then add a little splash of water so that potatoes are done

Now add onions and green chillies and fry for 2 minutes

Now add sliced tomatoes and seasonings. Now cover and cook until tomatoes are tender

You can also flip and cook the tomatoes to tender them more quickly

Now uncover and crack some eggs on top of the tomatoes base.

Add some more seasonings amd cover and cook until eggs are done

Sprinkle coriander leaves and serve hot with paratha
