Cook the noodles 30 seconds less than the packet says. Drain and set to one side. (drizzle some peanut or vegetable oil to stop them sticking if you have some)

If you are adding additional protein like chicken or tofu then cut into bite size chunks and add it just after you fry the garlic
- 3
On a medium heat, fry the garlic in butter until golden, add the soy sauce and pepper flakes then stir in the brown sugar with a splash of water.

Add the cooked noodles and stir thoroughly to coat every bite with the sauce. Before cracking in an egg.

Mix again until the egg is almost scrambled then turn off the heat.
