Ingredients

  1. 350 gspaghetti
  2. 400 gmonkfish skinned (other white fish will do just as well)
  3. 225 gcourgettes
  4. 1green chilli cord and seeded
  5. 1 tablespoonolive oil
  6. 1large onion chopped
  7. 1 teaspoonturmeric
  8. 1 cupshelled peas thawed frozen
  9. 2 teaspoonlemon juice
  10. 5 tablespoonshoisin sauce
  11. 150 mLwater
  12. to tasteSalt and ground black pepper
  13. Fresh dill sprigs to garnish

Steps

  1. 1

    Cook the pasta in plenty of boiling salted water for 8 to 10 minutes or until al dente

  2. 2

    Cut the fish into bite-size pieces.

  3. 3

    Thinly slice the courgettes, then finally chop the chilly if using.

  4. 4

    Heat the oil in a large frying pan and fry the onion for five minutes until softened.

  5. 5

    Add the turmeric

  6. 6

    Add the chilli (if using) courgettes and peas, and fry over a medium heat for five minutes until the vegetables have softened.

  7. 7

    Stir in the fish, lemon juice, hoisin sauce and water.

  8. 8

    Bring to the boil, then simmer uncovered, for about five minutes or until the fish is tender.

  9. 9

    Season well

  10. 10

    Drain the pasta thoroughly and turn into a serving dish toss in the source to coat then serve at once garnished with fresh dill
