45-50 minutes

8-10 people

175 gMargarine or unsalted butter
175 gCaster sugar
3large eggs
175 gSelf-raising flour (sifted)
1 tspBaking powder
1 tspVanilla extract
PinchSalt
1 tbspLemon Curd
1Lemon Zest
1Lemon Juice
Handfulblueberries

45-50 minutes

Mix all the ingredients together until fully combined. I normally start by whisking the butter and sugar then adding the eggs etc.

Once combined, add in the lemon curd, zest, juice and blueberries.

Pour into 18cm cake tin (or you could use a loaf tin!) and bake for 45-50 minutes.

Leave to cool and then enjoy! If you wanted to add an icing, a dusting of powdered sugar would work or maybe a lemon curd drizzle! :)
