Bring the water along with the stock cube to boiling point. Then whisk in the polenta, whisking until there are no lumps.

Reduce heat to a simmer. Whisk regularly until polenta has thicken, should only take about 5 minutes. Cover and cook for 25-30 minutes whisking every 4-6 minutes. Once polenta is too thick to whisk use a wooden spoon to stir.

Remove from the heat and add the butter and stir until its almost melted then add the cheese and season with salt and pepper if needed, continue to stir until cheese has melted.

Cover with lid and let it sit for 5 minutes.
