Ingredients

  1. Ground chicken
  2. 1/2 cuproasted almonds and cashews
  3. 1yellow onion
  4. 3garlic cloves (grated)
  5. 1/2 teaspoonginger (grated)
  6. 1/2red pepper (diced)
  7. 1/2lime (juice)
  8. mint (5 leaves chopped)
  9. cilantro (3 stems + leaves chopped)
  10. 1jalapeno (chopped)
  11. 6grape tomatoes (diced)
  12. 1/2 teaspoongaram masala
  13. 1/2 teaspooncurry powder
  14. 1/2 teaspoonchipotle chili pepper
  15. 1/2 teaspoongarlic powder
  16. 1/2 teaspooncumin

Cooking Instructions

    Roast almonds and cashews and blitz once cool. Set aside.

    On a plate, mix diced red pepper, 2 tablespoons of diced onions, and 1 tablespoon of chopped cilantro. Set aside.

    Blitz remaining onions,cilantro, mint, garlic, ginger, spices, lime juice jalapeno in a food processor. Add to ground chicken. If you have fried onions, add 1/3 cup chopped in the meat. Salt mixture.

    Shape mixture into logs. Cover outside in diced red pepper, onion, cilantro mixture.

    Bake each side for 8 minutes at 350. Sear on fry pan with on medium high for 2 minutes each side until brown.

    Drizzle with garlic mayo and Sriracha.
