Steps

Mix 6g of yeast and 14g of sugar in 207g of warm water(35 deg)

Let that mix rest for about 8 to 10 minutes

Mix 300g of AP flour (ideally T65) with 10g of salt in a bowl

After the wet ingredients have rested, add 13g of olive oil to it and mix everything in the bowl

Mix until everything comes together then take the dough out of the bowl and onto the work surface

Continue mixing using the slap and fold method for about 3 minutes (very easy just youtube it..)

Shape the dough into a ball, place it in a slightly oiled bowl, cover it and let it rest for an hour.

Flour the work surface and divide your dough into 6 equal parts (75g each if you want to be precise)

Flour the balls and cover them for 30 mins

If you have a pizza stone (which you should because it's life changing...) Make sure to preheat it in the oven for at least 45 mins at 250 deg. Should be really hot

If you don't have a pizza stone, just preheat your oven to the max for 45 mins as well

Flatten the balls until they're circular with a diameter of 15 cm. (Yes, measure it..)

Place them on cooking paper and place them in the oven

It takes between 2 to 4 mins depending on your oven, so make sure to monitor it and adjust accordingly.
