Butter Chillies

Butter chillies are my favorite.. I generally make these during summer as I get enough sun light in my balcony. They are very yummy with dal and curd rice. We can store for full year. In between better to sun dry once.

Butter chillies are my favorite.. I generally make these during summer as I get enough sun light in my balcony. They are very yummy with dal and curd rice. We can store for full year. In between better to sun dry once.

Wash chilies and dry under fan. Then slit each chillie vertically.

Prepare buttermilk add salt. Better if it is sour. Add ajwain. Add these chillies. Mix and cover keep for two days. Daily mix chillies. It should change to light green colour.

Third day remove chillies and sun dry. Eveng again you drop chillies in buttermilk. Repeat for another 3days till chillies aur dry. Daily have to drop in buttermilk. After 3days just dry chillies. Throw the buttermilk. Dry for another 2 days. If chillies are fully dried store them in a container. Whenever you want fry these chillies in oil and have with dal rice and curd rice.
