Ingredients

  1. 2.5Lbs. Flounder Fillets
  2. 1 CupYellow Cornmeal
  3. 1 CupFlour
  4. 1 1/2 CupsMilk
  5. 2eggs
  6. Old Bay Seasoning
  7. Black Pepper
  8. PinchSugar
  9. PinchSalt
  10. Oregano
  11. Paprika
  12. Cayenne Pepper
  13. 5-6 CupsCanola Oil (For Frying)

Cooking Instructions

    Place flounder on a paper towel and salt on both sides. A few healthy pinches. Place another paper towel on top and allow to sit for 10 minutes. Pat the fillets gently to remove excess moisture then season with black pepper.

    Mix all ingredients into a good size bowl aside from the 5-6 cups of oil and the flounder fillets. Add the milk slowly. You want a nice consistency. Not too thick and not too runny. You can’t take the milk out, so be careful adding it.

    Completely submerge a fillet in the batter, let excess drip off and place into hot oil. After about 90 seconds, you can give it a turn. It’s done when it’s golden brown. It doesn’t take long. Maybe 3 minutes total cooking time.

    I placed the fish on some greens after draining them on a rack. While they were draining, I took the liberty of frying some potatoes. Serve with lemon wedges, tartar sauce, or malt vinegar. Anything you like.

    They also make for good fish sandwiches.
