Battered Fried Flounder

Would you believe that flounder were considered garbage fish once upon a time? Some people still think they are, but personally, I find them to be delicious. Frying them in a cornmeal batter only adds to the satisfaction.

Would you believe that flounder were considered garbage fish once upon a time? Some people still think they are, but personally, I find them to be delicious. Frying them in a cornmeal batter only adds to the satisfaction.
Cooking Instructions
- 1
Place flounder on a paper towel and salt on both sides. A few healthy pinches. Place another paper towel on top and allow to sit for 10 minutes. Pat the fillets gently to remove excess moisture then season with black pepper.
- 2
Mix all ingredients into a good size bowl aside from the 5-6 cups of oil and the flounder fillets. Add the milk slowly. You want a nice consistency. Not too thick and not too runny. You can’t take the milk out, so be careful adding it.
- 3
Completely submerge a fillet in the batter, let excess drip off and place into hot oil. After about 90 seconds, you can give it a turn. It’s done when it’s golden brown. It doesn’t take long. Maybe 3 minutes total cooking time.

I placed the fish on some greens after draining them on a rack. While they were draining, I took the liberty of frying some potatoes. Serve with lemon wedges, tartar sauce, or malt vinegar. Anything you like.

They also make for good fish sandwiches.

Deep-Fried Flounder Deep-Fried Flounder
You often see this dish at an izakaya (Japanese gastropub), but I made this recipe to make it at home. You can eat the scales after deep-frying the fillets, but if you don't like the texture, shave the scales with a knife first. By adding a little sugar, it makes the ponzu taste better and not so sour. The fins and frills will be brown and crispy, and you can eat everything apart from the backbone. Fried Fish Fried Fish
This tasty fried fish recipe is made with a basic combination of flour and seasonings, but don't be fooled by the simplicity of this dish—the fillets fry up crispy and delicious. Haddock and cod are two excellent choices for fried fish, but tilapia, pollock, or another mild white fish should work fine. Be careful not to overcook the thin fillets or burn the crispy coating.
