When frying the egg, make sure not to overcook it. It's best if it stays a little moist. Use as much ketchup as you like. It's good with toasted bread, like a hot sandwich or panini, or with soft bread. Recipe by Mitsuko nesan

Ingredients

2 servings
  1. 2Eggs
  2. 2heaping tablespoons Ketchup
  3. 1 tspOil
  4. 2 sliceBread
  5. 1 dashMargarine (or butter)

Cooking Instructions

  1. 1

    Spread oil in a frying pan, add the beaten eggs and scramble them. Stop the heat before the egg becomes completely hard, and finish cooking with residual heat.

  2. 2

    Add the ketchup and mix.

  3. 3

    Spread margarine on the bread, sandwich the egg from step 1 and it's done!

I have made these for 44 years although I use toasted bread and I mash the eggs with a potato masher! One of my favorite comfort foods.
