Ingredients

  • 1medium onion, minced (or 3 tbs toasted onion flakes)
  • 6garlic cloves, minced (or 3 tsp roasted granulated garlic)
  • 3 tbsolive oil
  • 1/2 tspred chili powder
  • 1 tspeach basil, oregano, thyme, rosemary, sage, cumin
  • 1 tspfennel seed
  • 1 tspblack pepper
  • 1/4 tspcrushed red pepper
  • 3 tbssoy sauce
  • 2 tbsnutritional yeast
  • 1 1/2 cupsTVP (textured vegetable protein)
  • 3/4 cupvital wheat gluten
  • 1 1/2 cupswater
  • 3eggs
  • 3/4 cupcooked bulgur wheat
  • 3/4 cupwhole wheat bread crumbs
  • 1 cupricotta cheese
  • 2 tbswhole wheat flour

Steps

  1. 1

    Saute onion and garlic in olive oil (unless using toasted/ granulated onion/ garlic).

  2. 2

    Add above to food processor with all other ingredients and pulse until well-blended.

  3. 3

    Form into balls between 1/8 and 1/4 cup in size.

  4. 4

    Pan fry in olive oil until browned.

  5. 5

    Steam for 30 minutes.
