I tried preparing this kara-age in many different ways, but this was the most delicious!

The oyster sauce is optional.
Double frying makes it easier to burn your ingredients, so as soon as the color changes, quickly take them out of the oil.

Ingredients

2 servings
  1. 350 gramsChicken thigh meat
  2. 25 mlCooking sake
  3. 20 mlSoy sauce
  4. 2 tspUmami seasoning
  5. 1 tbspLight brown sugar (or granulated sugar)
  6. 13 gramsRaw ginger juice (grated with skin)
  7. 5 mlOyster sauce
  8. 1Katakuriko

Cooking Instructions

  1. 1

    Combine all the seasoning ingredients except for the katakuriko with the chicken. Rub the seasoning into the meat.

  2. 2

    Mix in the katakuriko and while waiting for the ingredients to blend, chop the cabbage and other garnishing vegetables.

  3. 3

    Deep fry for about 5 minutes in oil heated to 170°C, then remove and let sit for 2 minutes.

  4. 4

    Briefly deep fry once more in oil heated to 200°C, then serve.
