Ingredients

4 - 6 servings
  1. For Paneer Tikka
  2. 500 gmPaneer (cubes)
  3. 1/2 cupRed bell pepper (diced)
  4. 1/2 cupcapsicum (diced)
  5. 1/2 cuponion (diced flaked)
  6. 1 tbspfinely chopped fresh coriander leaves
  7. 1 tbspfinely chopped fresh mint leaves
  8. 1/2 cuphung curd
  9. 1/2lemon juice
  10. 2 tsproasted besan
  11. 1 tbspginger garlic paste
  12. In spice mix powder
  13. 1 tbspKashmiri red chilli powder
  14. 1 tspGaram masala powder
  15. 1 tspJeera powder
  16. 1 tbspCoriander powder
  17. 1 tspAmchur powder
  18. 1/2 tspBlack salt
  19. 1 tspKasuri methi
  20. 1/2 tspblack peppercorns powder
  21. as per tasteSalt
  22. 2 tbspmustard oil (heated)
  23. 1Live charcoal with ghee
  24. For Gravy
  25. For base purée we need
  26. 1medium onion (diced)
  27. 5-6tomatoes (diced)
  28. 1 inchginger chopped
  29. 5-6garlic cloves peeled and chopped
  30. 2-3green chilli
  31. 4-5whole Kashmiri red chilli
  32. 5-6whole cashew nuts
  33. Handfulgreen coriander stems
  34. to TasteSalt
  35. 1 tbspoil
  36. For complete gravy dish
  37. 1whole black cardamom (splited)
  38. 1 tspcoriander powder
  39. 1 tbspKashmiri red chilli powder
  40. 1/2 tspgaram masala
  41. 1/2 tspkasuri methi
  42. as RequiredGrilled Paneer tikka
  43. as required Reserved paneer tikka marinade
  44. 1 tbspfresh coriander leaves (chopped)
  45. 1 tspoil
  46. 2 tsp ghee

Cooking Instructions

    In a mixing bowl pour mild hot mustard oil add Besan to it mix well then add Kashmiri red chilli and all the remaining powder spice,mix them all nicely then add in ginger garlic paste,coriander leaves,kasuri methi,mint leaves mix well. Then again add hung curd,lemon juice and salt mix every thing nicely.

    In this mixed spices masala add all the diced and cubed paneer,onion,capsicum and red bell pepper mix it well with light hand so that all the masala coat the paneer well without damaging it.
    Now we will smoke the marinated paneer by placing a live charcoal and pouring few drops ghee over it, keep it cover for at least 2 - 3 minutes to impart smoke flavour in it.

    Now skew the paneer,onion,capsicum and red bell pepper over the skewers.
    Heat the grill pan and grill the paneer tikka on it.keep the rest marinade masala for further use.

    While tikka is getting grilled,we will prepare the base gravy.
    Heat a pan add oil to it add chopped onion fry till light golden brown,then add chopped ginger and garlic,both red and green whole chilli to onion, sauté for a minute then add chopped tomatoes to it mix it well add some salt,coriander stems, cashew,little bit water cover it and cook it on low flame till the tomato get mushy.
    Cool the mixture and grind it.

    Now in a wok heat oil and ghee to it, add splinted black cardamom and Kashmiri red chilli powder to oil then add the prepared gravy base to it stir and cook till oil separate from the gravy then add coriander powder,garam masala powder and left over marinade tikka masala to the wok,cook it again till oil separates.

    Now add paneer tikka to the gravy,garnish with kasuri methi and chopped coriander leaves adjust the gravy consistency with water, cook for 4-5 minutes on low flame.

    Lip smacking restaurants style paneer tikka masala is ready to serve and enjoy.
