Ingredients

2 people
  1. 2bell or long sweet peppers
  2. 1yellow or sweet onion
  3. 2limes
  4. 1 bunchcilantro
  5. 100 g (1/2 cup)white rice
  6. 2avocado
  7. 1red onion
  8. 1 cansweet corn
  9. Sour cream
  10. Salsa
  11. 1/2 headlettuce
  12. 200 mlblack beans
  13. Spice mix
  14. 2 mloregano
  15. 5 mlcumin
  16. 5 mlred chili
  17. 2 mlsalt
  18. 2 mlpepper

Cooking Instructions

    Soak dried black beans over night or use canned.

    Steam rice. Once done mix in juice from 1/2 of a lime and some chopped cilantro

  3. 3

    In a skillet on high, fry the onions, peppers oil. Once half done, add spices.

    Mash avocado with 1/4 of the juice lime, lime zest, finely chopped red pepper, salt, pepper

  5. 5

    Drain or defrost corn.

  6. 6

    Assemble bowl.
