Teriyaki Chicken Rice Bowls

Teriyaki Chicken Rice Bowls is made of tender juicy chicken with homemade teriyaki sauce, garlic herb rice and stir-fried fresh vegetables. It is quick and easy lunch or dinner recipe made with homemade Teriyaki Sauce.
Boneless Chicken is marinated with soy sauce, honey, fresh orange juice and ginger. Chicken is then pan fried until golden while the marinade is reduced to thick flavorful sauce. Chicken is then mixed with honey-orange glazed sauce.
Garlic Herb Rice is prepared with mild flavors of garlic and herbs.
Stir-Fry vegetable is prepared by stir frying vegetables with fresh garlic and ginger flavored with chicken stock, soy sauce and tomato ketchup.
Assembling bowls - Rice is spread on to the bowls, followed by Teriyaki chicken along with sauce and veggies. Garnish with coriander leaves and sesame seeds

In a bowl, take freshly squeezed orange juice. Add in soy sauce, honey, grated ginger, sesame oil.

Whisk everything together And add in chicken cubes. Mix and let it marinate for 20 minutes.

Meantime prepare stir-fry vegetables. Prepare sauce by dissolving chicken stock cube with hot water. Add in soy sauce, tomato ketchup, corn flour and mix well without lumps.

In a pan heat oil and sauté chopped garlic and ginger. Add in the vegetables and stir-fry. When half done, add in prepared sauce mixture and stir fry until sauce thickens. Add salt and pepper powder as per taste. Vegetables stir-fry is ready.

To prepare Garlic Herb Rice, in a pan melt butter. Add chopped garlic and saute until aromatic. Add Italian seasoning, chopped coriander leaves and saute for 5 seconds. Add cooked rice, salt and saute for 2 minutes until flavors are incorporated.

Now to prepare Teriyaki Chicken, heat 1/2 tbsp. olive oil. With help of slotted spoon strain the chicken from the marinade and add it to the pan, reserving the marinade in the bowl. Stirring occasionally sauté the the chicken until well cooked and golden. Remove chicken into a bowl.

To the same pan pour in chicken marinade along with 2 tsp butter. Bring to boil stirring constantly, until marinade thickens. Add chicken back to the pan and stir to coat well with the sauce and cook for 30 seconds. Teriyaki Chicken is ready to serve.

To serve, spread Garlic Herb Rice on a deep plate. Spread Teriyaki Chicken along with sauce over the rice.

Sprinkle with coriander leaves and sesame seeds. Serve along with Stir-Fry Vegetables.
