Whole Wheat Flour & Adzuki Sakekasu Soda Bread

I wanted to use up my sakekasu; I tried adding it to the dough for soda bread I always make, and it came out delicious.
I prefer sakekasu with a gentle flavor over yogurt in soda bread.

Adjust the oven baking time accordingly.
Since this bread is to accompany meals, it uses non-sweetened adzuki beans. It has it's own simple deliciousness, but it's also delicious when eaten with cream cheese.
You can also use dry fruit and nuts in place of the adzuki beans.

Ingredients

  1. 200 grams◉Whole wheat flour
  2. 50 grams◉Whole grain bread flour
  3. 1 tbsp◉Sugar
  4. 1 tsp◉Salt
  5. 1 tsp◉Baking powder
  6. 1 tsp◉Baking soda
  7. 50 gramsSakekasu (sake lees)
  8. 200 mlWater
  9. 100 gramsBoiled adzuki beans (non-sweetened)

Cooking Instructions

    Microwave the sakekasu and water together to soften. Mix together well.

    Mix together all of the ◉ ingredients in a bowl. Then add the mixture from Step 1 and the adzuki beans, and mix until no longer powdery and it comes together into a ball.

    Use your hands to form it into an elliptical shape. Line an oven tray with a baking sheet and place the dough on top. Dust with flour (not listed) on top and slash the top as desired.

    Bake in a preheated oven at 180 ℃ for 25-30 minutes and it's complete.
