Stir-Fried Atsuage and Ground Pork Stir-Fried Atsuage and Ground Pork
I added doubanjiang to our family's staple flavoring sauce "sweet and sour soy sauce" and made this dish. The seasoning mixture gave the atsuage a really satisfying flavor that really bumped up my appetite. This flavor goes well with all kinds of vegetables, so you can make your own dish! Eggplants go well with this flavor. If you don't want the oil from the atsuage, pour boiling water over it to drain the excess oil. There won't be enough liquid in the pan, so please add plenty of water when you thicken the sauce at the end. It's delicious even without doubanjiang! You can use ra-yu spicy chili sesame oil, gochujang (spicy Korean pepper paste), or ichimi seasoning instead of doubanjiang. Sprinkling sesame seeds on top at the end makes the dish look nice. Stir-fried Ground Pork Wrapped in Lettuce Stir-fried Ground Pork Wrapped in Lettuce
I had a similar lettuce dish in a Chinese restaurant and recreated at home.-Deep-fry the harusame bean noodles in batches. They will expand and fatten up quite a bit. When they expand and stop bubbling, they are done. If you deep-fry a big portion in one go, they won't be crispy.-Use a non-stick pan when you fry the pork. For 2 servings. Asparagus w/Pancetta Stir-Fry Asparagus w/Pancetta Stir-Fry
I love cooking with bacon... and pancetta, Italian bacon, is my favorite. It's a great compliment to many green vegetables. This is especially handy when you live with green-phobic family members! There's always a debate as to whether to snap the woody bottoms off or snap one and cut the rest the same size. The problem with the snap-and-cut method is when you can get a mixed bunch of asparagus (i.e. woody and tender). If you snap one that is very tender and cut the rest to size, you can wind up with some woody pieces. So I snap all of mine. That being said, use the method that works for you. Whether you snap or cut, use the ends. Cut off any brown and/or ungreen parts, then peel the outer skin. Use the ends to make cream of asparagus soup or add them to other veggie cuttings and/or bones to make stocks and broths. Recipe is: © 2002-2022, Sheryl Ann Umstead-Kelly, All rights reserved.
