This creamy egg curry is easy to make. For the creamy texture, I have used some cashew paste and fresh cream. Eggs are everyone's favorite. To get perfect eggs, fill a pot with enough water so that the eggs get submerged. Add some salt and stir. Salt prevents the eggs from breaking. Add the eggs and let it boil for 8-10 minutes on medium-high flame. When done, transfer the eggs to a bowl filled with ice water. When it cools, de-shell the eggs. Make slits with a knife. Add salt, kashmiri red chilli powder and turmeric powder. Mix well so that the eggs are coated with the masala.

Heat mustard oil in a kadhai. Add the masala coated eggs and fry till light golden and crispy. Remove from pan and set aside.

In the same kadhai, add ghee, bay leaves, cinnamon stick, cardamoms, cloves. Saute for few seconds.

Add the sliced onions and cook them till they caramelize.

Add the ginger garlic paste. This adds flavor and pungency to the curry. Saute till the raw smell leaves. Add the powdered sugar, salt, black pepper powder and cumin powder and cook till the onions melt and assimilate well with the spices.

Make a paste of soaked cashews and add it to the masala. Mix it well so that it combines well with all the spices. Saute till oil appears at the surface.

Add hot water and cover and cook on low flame for 5 minutes or until mixture thickens a bit. Add fresh cream.

Add green chillies, garam masala powder and kasuri methi. Mix well. Garnish of kasuri methi elevates the dish to a new level.

Add the fried eggs. Saute it well for few minutes.

Garnish with chopped coriander leaves. Mix it well.

Delicious Creamy Egg Curry is ready. Enjoy it with hot rotis or parathas.
