Original Tender Youlinji (Chinese Deep Fried Chicken with Sweet and Sour Sauce) made with Chicken Breasts

This is the original recipe from our family's various Youlinji recipes!
I followed "Salted chicken style prep method"to make the chicken breasts tender.
I used to dust chicken breasts with katakuriko and deep-fry right away, but coating the chicken well with the katakuriko seems to reduce the amount of katakuriko dropping into the oil. Recipe by Hokkori-no

Cooking Instructions

[Make the sauce] ① Add soy sauce, sugar, vinegar, and water to a heatproof dish, and microwave for 1.5 minutes at 600 W.

Add minced white part of the Japanese leek, and white sesame seeds, then mix.

Chop the chicken breasts into bite-size pieces, and put into a bowl. Add sake, sugar, and salt. Rub in the chicken, and let it sit for a while.

Step 3 is preparation to make the chicken breasts tender. "Salted chicken style prep method"

Basic recipe ① Add katakuriko into the Step 3 bowl, and mix with chopsticks. Coat the chicken breasts with the katakuriko.

② Deep-fry Step 5 chicken in heated oil, and pour Step 2 sauce on top.

Recipe to make this dish more tender ① Steps 1 ~ 3 are the same. Add mayonnaise into Step 3 bowl and mix, then let it sit for a while.

② Add the katakuriko into the Step 7 bowl, and whisk with chopsticks. Coat the chicken well with katakuriko.

③ Deep-fry Step 8 chicken in the heated oil, then pour Step 2 sauce on top.

[To make this dish even more tender] ① Steps 1 ~ 3 are the same. Add vegetable oil and honey into Step 3 bowl, and mix. Let it sit for a while.

② Add the egg and katakuriko into Step 10 bowl, and whisk with chopsticks.

③ Deep-fry Step 11 in the heated oil, then pour Step 2 sauce on top.
