Ingredients

  1. 2 lbsHamburger Meat
  2. 2-4 ClovesGarlic, Minced (fresh)
  3. 1/2 Vidalia Onion, Chopped (medium)
  4. 1 Red Onion, Chopped (medium)
  5. 1 Shallot, Chopped
  6. 1 Red Bell Pepper, Chopped (roasted)
  7. 1 Yellow Bell Pepper, Chopped (roasted)
  8. 1 Orange Bell Pepper, Chopped (roasted)
  9. 6 Serrano Chill Peppers, Chopped (roasted)
  10. 30 oz Light Red Kidney Beans, Drained
  11. 30 oz Stagg Classic Chili Base
  12. 15 oz Stagg Dynamite Chili Base
  13. 15 oz Northern White Beans, Drained
  14. 15 oz Black Beans, Drained
  15. 20-30 oz Fire Roasted Tomatoes, Diced
  16. 6-12 oz Mushrooms, Drained
  17. 12 oz Tomato Paste
  18. 8 oz Tomato Sauce
  19. 2 Tbsp Worcestershire Sauce
  20. 1 Cup Beef Broth
  21. 1-2 Tsp Ghost-Carolina Reaper Pepper Sauce (choose your level)
  22. 2 Tbsp Chili Powder
  23. 1 Tsp Ground Cummin
  24. 1 Tsp Paprika
  25. 1/4 Tsp Cayenne Pepper
  26. 5 cranks Pink Himalayan Salt
  27. 5 cranks Black Pepper
  28. 2 Tbsp Brown Sugar
  29. 5 circles Fresh Honey (around the pot)
  30. 1 Tsp Black Truffle Oil
  31. 1 Tbsp Olive Oil (saute)

Steps

  1. 1

    Broil or char ALL Bell Peppers and Serrano Peppers. The skin should turn black and blister. Move to a cloth covered bowl to "steam" after cooking.

    Beware the Serrano Peppers can "pop" sometimes, especially if your broil in side. Preferred method is charing over an open flame.

    Chop ALL Onions and the Shallot. Mince your fresh Garlic. Set aside the Onions from the Shallot and Garlic.

  3. 3

    Heat Olive Oil in a large pot/pan on medium heat and apply garlic and shallots once heated. DO NOT overcook these items, should saute for around 30-45 seconds if the oil is hot and produce a nice aroma.

    Add in Hamburger and Onions to your sauteed mixture. Cook while often stirring to help break up the meat as well as ensure it does not burn. Cook until only about 10-15% remains pinkish in color.

    If worried you can cook until all is browned but do not overcook to where parts burn.

    Place ALL Peppers inside of an ice bath. You will be able to separate the blistered skin from the body at this point. You are looking for a slick to the touch exterior. If it feels crispy or leathery it needs removed still.

    Deseed the appropriate Peppers and chop to desired size.

    BEWARE seeds from the Bell Peppers MUST be removed or they can cause an upset stomach. Seeds of the Serrano Peppers can remain.

    Combine ALL ingredients into a 6+ quart crockpot. Be careful when stirring as it will be full.

    Allow mixture to cook, covered, for 10-14 hours on a low heat. Stir the chili mixture occasionally.
