Ingredients

20 minutes
  1. 4eggs
  2. 2ciabatta rolls
  3. 200 gany greens (baby marrow, asparagus or mange tout)
  4. 1 Tablespoonolive oil
  5. 1 tablespoonbalsamic vinegar
  6. 1 Tablespoonhoney
  7. 1 teaspoonwhole grain mustard
  8. Salami

Steps

20 minutes
  1. 1

    Roast 200g baby marrow or any other greens (I finish it in the air fryer to crisp them)

    Grease a muffin pan, add half a teaspoon of water and an egg and bake at 180 degrees for 8 minutes

    Mix a tablespoon of olive oil, a tablespoon of balsamic vinegar, a tablespoon of honey and a teaspoon of whole grain mustard. Pour a bit over toasted rolls

  4. 4

    Add some salami on the rolls and the crispy roasted greens on top of that

    Serve the egg on top, with the remaining sauce
