Potatoes and a dessert ! Sounds very healthy, right. Well ! Yes, it's really a healthy Dessert that has lots of Vitamins and Calcium and not to forget, Carbohydrates too. Not only is it healthy but it also looks gorgeous. With just a few ingredients, you are good to go. Kids will love this yummy Kheer and the adults will just drool over it.
This is made in different ways by different people but I prefer it this way. And serving it with Fresh Cream is absolutely my twist to it and my way of presenting it to my family and friends.

First of all, pressure cook potatoes and mash them well.

In a kadai or a cooking pot, heat butter or ghee on a low flame, shallow fry the dry fruits and add the mashed potatoes along with milk and sugar. Simmer on a low heat for the next few minutes. Be careful with it as it splashes and spills a lot.

Keep stirring in between and take care not to burn it at the bottom. Now add the cardamom powder. Simmer until the desired consistency is attained. Keep it on a low heat. Lastly stir in some mawa or khoya. Mix well and take it off the heat. Allow it to come down to the room temperature first before refrigerating it.

Serve it chilled with some fresh cream on top in orange bowls as I did for a fancy look.
