Healthy and Tender Chicken Meatballs Using Tofu and Ground Chicken Breast

Ground chicken breast is a healthy option, but tends to be dry and crumbly. By adding tofu and reducing the amount of binding agent, you can make tender and fluffy meatballs. The cooking liquid is tasty, so do not waste it.
The only binding agent I use is an egg, so the meatballs just hold their shape. If you want to make the meatballs slightly denser, add 1 tablespoon of katakuriko. Adjust the amount to your taste. The mixture is very soft, so do not boil vigorously in the water, lest they fall apart. Instead, keep the cooking liquid simmering gently. Recipe by Heartful Kitchen Rei

Cooking Instructions
- 1
Drain the tofu well. Chop the onion. Combine all the meatball ingredients and mix well.
- 2
The mixture is very soft, so spoon the mixture gently into the cooking water. Keep the water at a simmer.
- 3
If you boil the water vigorously, the meatballs will fall apart, so be careful. Once you finish spooning the meat balls into the water, turn off the heat. Cook the meatballs through with the residual heat.
- 4
Cool the meatballs in the cooking liquid to keep them moist. Use the cooking liquid to make your hot pot and soup.

I love recipes that use ground meat so I'm always thinking of different recipes.-It's much easier if you add a little oil to the spoon when dropping the meatballs into the oil.-It's fine to eat as is because there is already a lot of flavor. However, you can also add ketchup or mustard according to your preference. Recipe by Komomomomo cookpad.japan -

Tender and Juicy Low-Cal Chinese Meatballs Tender and Juicy Low-Cal Chinese Meatballs
By cooking the meatballs slowly over a low heat (and using the residual heat), the resultant meatballs are very tender. By boiling the meatballs, you can remove the excess fat and they are healthier. The result is still satisfying. When you are on a diet but want to eat meat, this is a good dish.[How to boil the meatballs]Once the water has boiled, turn down the heat to very low. The meatball mixture is quite soft and they won't hold their shape if boiled vigorously! Shape the mixture into balls right before placing them in the hot water. After placing all the meatballs, increase the heat a little and cook for 3 minutes. Turn the heat off and cover with a lid. Leave them to sit until cooled down. While making the minced cutletI thought I could use the mixture in a sweet and sour dish and that's how I came up with this.If the mixture becomes soft it'll be difficult to create meatballs (even though the ones in the picture aren't really meatballs either...).Rather than by hand, use a spoon to get a more firmly rounded meatball shape.
