Ingredients

4 servings
  1. 200 gramsShijimi clams (basket or freshwater clams)
  2. 10cm worth Sliced Japanese leek
  3. 1 tbspFinely chopped ginger
  4. 1 tspSesame oil
  5. 800 mlWater
  6. 1 tspWei-pa (or chicken soup stock)
  7. 1/2 tspSalt and pepper
  8. 1 tspSoy sauce

Cooking Instructions

    De-sand the shijimi clams, wash well, and strain through a sieve.

  2. 2

    Heat sesame oil in a pot and sauté the Japanese leek and ginger.

  3. 3

    Add the shijimi clams to Step 2 and continue to sauté.

  4. 4

    Once the clams have opened, add the water, Weipa, salt and pepper, and soy sauce to season and enjoy!
