Make Delicious Tofu Mayonnaise with Shio Koji♪

I'm into making sauces and different dishes that use shio-koji.
I use rock salt. Just a little goes a long way.

There is no need to use any eggs or dairy when making tofu mayonnaise. It's recommended for those with food allergies.

Store-bought mayonnaise contains oils, additives and sugar, so it's not too good for your health. For times when you want to have a healthy alternative to mayonnaise, try tofu mayonnaise! If you add garlic, it very goes well with European or American dishes. It also goes great with ratatouille. Recipe by Mikikimiki

Ingredients

  1. 1 blockFirm tofu
  2. 1 tbspShio-koji
  3. 1/2 tbspWhite miso
  4. 1/2 tbspWhite sesame paste
  5. 1/2 tbspMirin
  6. 1/2 tspLemon juice
  7. 1 tbspCashew nut powder
  8. 1 cloveGarlic (optional)

Steps

  1. 1

    Drain out excess moisture from tofu, combine all ingredients in a blender, pulse, then it's done.

  2. 2

    This is the original tofu mayonnaise. I've been creating Shojin-ryori recipes that use this mayonnaise.
