Grate ginger in your mixing bowl and in cinnamon

Add your self raising flour and sugar

Add in your margarine and mix to with your hands to achieve a course texture

Add one egg at a time and knead your dough

Wrap with cling film and let it rest for 30minutes

Add generous amount of flour to your rolling board and place your dough...roll using the rolling pin then cut the cookies to the desired shape...don't overspread the dough while rolling it

Grease your baking tray and line your cookies and Bake in a preheated oven for 10 to 15 minutes at 180 degrees...

Repeat the same baking process for the second batch as you check for the Browning at the edges bake for 10-12 or 15 mins

Let them cool or store in a tight container to consume the following day or later
